Shakshuka, a delicious North African and Middle Eastern dish made of eggs poached in a spiced tomato sauce. Here's how you can make it:

Ingredients:

  • 2 tablespoons olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 red bell pepper, chopped

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • ½ teaspoon ground chili powder (optional)

  • 1 can (400g) crushed tomatoes or fresh tomatoes

  • Salt and pepper to taste

  • 4 eggs

  • Feta cheese (optional)

  • Fresh basil or parsley for garnish

Instructions:

  1. Sauté the Vegetables:
Heat olive oil in a pan over medium heat. Add chopped onions and sauté until soft. Add garlic and bell pepper and cook for another 3-4 minutes.

  2. Add the Spices:
Stir in cumin, paprika, and chili powder. Cook for 1 minute until fragrant.

  3. Cook the Tomato Sauce:
Pour in the crushed tomatoes and season with salt and pepper. Let it simmer for about 10 minutes until the sauce thickens.

  4. Add the Eggs:
Make small wells in the sauce and crack the eggs into them. Cover the pan and let them cook for about 5-7 minutes or until the whites are set but the yolks are still runny.

  5. Garnish and Serve:
Sprinkle with feta cheese and fresh herbs. Serve hot with crusty bread or pita.
