 Peach and Cherry Whipped Cream Cake with Chocolate Shavings ๐Ÿ‘๐Ÿ’๐Ÿฐ


Ingredients:

For the Cake:

  • 2 cups all-purpose flour

  • 1 ยฝ cups granulated sugar

  • 1 cup unsalted butter (softened)

  • 4 eggs

  • 1 cup milk

  • 1 tbsp vanilla extract

  • 2 ยฝ tsp baking powder

  • ยฝ tsp salt

For the Frosting:

  • 2 cups heavy whipping cream

  • ยฝ cup powdered sugar

  • 1 tsp vanilla extract

For the Decoration:

  • Chocolate shavings (for the sides)

  • Sliced peaches (canned or fresh)

  • Cherries (with stems for topping)

  • Optional: White icing for piping (for the border)


Instructions:

1. Bake the Cake:

  1. Preheat oven to 350ยฐF (175ยฐC) and grease two 8-inch round cake pans.

  2. In a bowl, sift flour, baking powder, and salt together.

  3. In another bowl, beat butter and sugar until light and fluffy.

  4. Add eggs one at a time, beating well after each.

  5. Mix in vanilla extract.

  6. Alternately add dry ingredients and milk, mixing until just combined.

  7. Pour batter into cake pans and bake for 30-35 minutes, or until a toothpick comes out clean.

  8. Let cakes cool completely before frosting.

2. Prepare the Frosting:

  1. In a chilled bowl, beat heavy whipping cream, powdered sugar, and vanilla until stiff peaks form.

  2. Keep refrigerated until ready to use.

3. Assemble the Cake:

  1. Place one cake layer on a serving plate and spread a layer of whipped cream.

  2. Place the second cake layer on top and cover the entire cake with whipped cream.

  3. Press chocolate shavings around the bottom sides of the cake.

  4. Arrange sliced peaches around the top edge of the cake.

  5. Place cherries in the center for decoration.

  6. Pipe a decorative border with white icing if desired.

Final Step:

Refrigerate for at least 1 hour before serving to set the frosting.
