Cake With Raspberry


Ingredients:

For the sponge:
- 4 eggs
- 120 g sugar
- 120 g flour
- 1 bag of vanilla sugar
- 30 g butter, melted and cooled.


For the cream:
- 250 g mascarpone
- 250 ml of whipped cream
- 3 tablespoons of powdered sugar
- 1 teaspoon vanilla extract

- Raspberries
- Raspberry jam
- Biscuits Russian cigarettes.

Preparation:

Heat oven to 190 degrees.
Butter and flour a 18 cm diameter mold.
Beat eggs with sugar until the mixture whitens. Pour the sifted flour and mix gently with a spatula. Gently add the butter and mix well all.
Pour the batter into the pan and cook for about 25-30 minutes. "Do not open the oven the first 20 minutes." Cool cake then remove and leave on rack. Cut into 3 equal parts and leave aside.

Whisk the mascarpone, whipped cream, powdered sugar and vanilla.

Spread the raspberry jam on the first disk, cover with the second and put half the amount of cream, well spread, then put the raspberries. Cover with the last.
Put the remaining amount of the cream on top and sides of the cake, although smooth the surface. Chill.

Before serving, decorate the top with raspberries, and sides with cigarettes biscuits
