Dairy Free Carrot Cake
Minus the eggs and dairy, plus the flavor! This unique cake is
best served with a Dairy-Free Cream Cheese Frosting and coarsely chopped
walnuts, but feel free to use any dairy free icing that suits you!
Great for kids birthdays parties as it's allergy free or a quick snack -
all done in 50 minutes!
Makes one 10" cake
Prep Time: 15 minutes
Cook Time: 35 minutes
Total Time: 50 minutes
Ingredients:
1 cup cut pitted Dates
2 T. flax meal
1 cup finely ground walnuts
1/2 t. ground cinnamon
1 cup whole-wheat pastry flour
1/2 t. ground ginger
3/4 cup all-purpose flour
Boiling water
1 cup grated carrot
2 T. Egg Replacer mixed with 3 T. hot (not boiling hot) water
1 t. vanilla extract
2 t. cider vinegar
1/2 cup raisins
3 T. dairy-free soy margarine, melted
1/4 cup canola oil
3/4 t. salt
3/4 cup maple syrup
3/4 t. baking soda
For Serving:
Dairy-Free Cream Cheese Frosting
Finely diced walnuts, or topper of choosing
Preparation:
1. Preheat your oven to 325 F. Oil a 10 inch pan. In a small bowl, mix the chopped dates along with hot water and chuck something on top cover. Let soak for a quarter-hour.
2. Meanwhile, inside of a food processor, process the flours, cinnamon, ginger, walnuts, flax meal, baking soda along with salt until the mixture is smooth - like fine crumbs. Move the mix to your combining bowl, then place it to one side.
3. Process your dates with the soaking water inside of a food processor right up until smooth. Add some maple syrup, canola oil, melted margarine, cider vinegar, along with vanilla extract and keep on processing. Add the Egg Replacer mix, keep processing until even.
4. Add the wet ingredients to the dry, stirring until the combo nicely mixed together. Stir in the grated carrot and raisins till evenly distributed, then dump the mixture into your prepared pan.
5. Bake for 30-40 minutes, or till a toothpick placed inside the center of the cake emerges clear. Cool entirely on the wire chilling holder ahead of frosting with Dairy-Free Cream Cheese Frosting. Top with some finely diced walnuts - or whole walnuts, or your topping of choice. The world is your oyster.
