Whole Grain Loaf
You will need:
500g whole grain (wholemeal) flour
3g instant dried yeast
1 tsp salt
Approximately 360ml hand-hot water to mix
Method:
1. Mix the dry ingredients together in a large bowl. Remember that your dough will need to have room to rise until it has doubled in size.
2. Add the water a little at a time, squeezing the ingredients together with one hand until you have a sticky dough. The exact amount of water required depends on the type of flour you use. Don't be afraid to adjust the amount of water until you have dough with a workable consistency.
3. Cover the bowl with a clean tea-towel or loose lid. Leave the dough in a warm place to rise until it has roughly doubled in size. This can take about an hour.
4. Turn the dough into a floured surface and knead for a few minutes until you achieve a smooth, stretchy consistency.
5. Press the dough into a greased loaf pan and leave it to rise again.
6. Wait until the dough has reached the top of the loaf pan and is springy to the touch. Be patient. If your dough is well-risen at this stage, your finished loaf will have an excellent texture.
7. Bake at 200oC for 30 minutes, or until evenly browned. The loaf is cooked when it tips easily out of the pan and sounds hollow when you knock on its bottom.
8. Leave the loaf to cool on a wire rack for half an hour before cutting it.
9. Eat!
